Char Siew Bao/Char Siu Bao (Chinese BBQ Pork Bun) Recipe

Found an all time favorite food recipe on-line that I would love to try out. Look forward to sunk my teeth on this juicy looking buns. *heart*

Char Siew Bao/Char Siu Bao (Chinese BBQ Pork Bun) Recipe

Makes 16 buns

Ingredients for dough:

Bun:

8g instant dry yeast
160ml lukewarm water
½ tsp white vinegar or lemon juice (optional)280g low-protein flour aka hong kong flour
100g wheat starch
90g icing sugar
30g shortening or vegetable oil
10g baking powder
10ml cold water

Fillings:

A
250g char siew, diced
½ tbsp cooking oil
1 tsp sugar*
1 small onion, diced
1 tbsp oyster sauce*
1 tbsp soy sauce*
1 tsp. sesame oil
1-2 drops red food colouring (optional)

B
150 ml water
1½ tbsp corn flour
Salt to taste

*Some store-bought char siew comes with sauce, use it for preparing filling. Omit sugar, oyster sauce and soy sauce.

Method:

Fillings:
1. Heat oil in pan, sauté onion for 1 to 2 minutes. Add in all other ingredients A, stir fry for 1 minutes.
2. Mix together water with corn flour, add mixture into the pan and stir well. Simmer until gravy is thickened.
3. Transfer to plate and allow to cool.
4. Divide filling into 16 portions if desired, set aside for later use.

Buns:

1. Sift together flours and icing sugar. Place sifted flour mixture in a large mixing bowl and make a well in the middle.
2. Fill well with lukewarm water, vinegar and yeast. Use a spatula, gently stir the water to dissolve the yeast then slowly bring together flour mixture.
3. Add in shortening or oil and knead for 10-15 minutes until soft dough is formed. It should be smooth on the surface.
4. Cover dough with damp cloth and let it rise for 30 minutes or until it is doubled in size. I used bread maker’s dough mode to prepare my dough up to this step.
5. Dissolve baking powder in cold water, sprinkle over dough and knead until well combined. Divide dough into 16 equal portions and flatten with a rolling pin to make a 3” circle. Then place a heap teaspoon of filling in the middle, wrap and pleat the dough to seal. Place it on a 1.5” square parchment paper, seal side up.
6. Arrange buns into a steamer, leave about 1” gab in between buns. Spray water mist over buns, and steam in a preheated steamer on high heat for 12 minutes. Remove buns from steamer and cool on rack to prevent soggy bottom.

Cook’s Notes:

1. If bigger bun is desired, divide dough into 12 equal portions in step 5.
2. There is no need to rest the dough after adding in baking powder, but if time allowed, rest it for 10 minutes or so to get fluffier buns.
3. Adding a few drops of vinegar into steaming water will produce whiter buns, but this is optional.
4. Steamer must be preheated otherwise bun would not rise to the volume as it should be.
5. Spray the surface of bun with water mist helps to produce buns with smooth surface after steamed.
6. DO NOT open the lid during the steaming process.
7. If there are yellowish spots on the steamed buns, it means the baking powder is not fully dissolved.

Famous Amos Cookies Recipe

(Makes 122 cookies)

Recipe may be halved:

2 cups butter
4 cups flour
2 tsp. baking soda
2 cups granulated sugar
2 cups brown sugar
5 cups blended oatmeal (measure oatmeal & blend in blender to a fine powder)
24 oz. chocolate chips
1 tsp. salt
18 oz. Chocolate bar (grated)
4 eggs
2 tsp. baking powder
3 cups chopped nuts (your choice)
2 tsp. vanilla

Cream the butter and both sugars.
Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda.
Add chocolate chips, Cadbury bar and nuts.
Roll into balls and place two inches apart on a cookie sheet
Bake for 10 minutes at 375 degrees.

Sign Language at Prescott Inn, Medan Tuanku, Kuala Lumpur and more updates

Hello hello from Kuala Lumpur :)

I'm here for a 5 days vacation... NOT... I'm actually here to attend a Sign Language Course (Kursus Bahasa Isyarat) organized by Institut Sosial Malaysia (ISM). 

note:  I feel lucky :) ... Never thought that my 1st kursus of the year needs me to be in KL ... lol. 

Staying at Prescott Inn for the 1st time (it's near Medan Tuanku's Monorail Station which is pretty convenient) and 1st time going to KL via Air Asia. 

From LLCT (Air Asia's Low Cost Terminal) I took  Sky Rapid (bus) which cost RM9 per trip to KL Central. From KL Central I walk to Brickfield Monorail (currently the fastest way to the monorail is block due to some construction site) that takes about 5 minutes. From the Brickfield Monorail I bought a ticket to MR8 (Medan Tuanku) that cost me RM2.50 per trip. Didn't take too long to reach MR8 (it took only 8 to 10 minutes). And lastly from the MR8 station it takes 1 minute to reach the hotel.... lol... travelling around KL is a piece of cake even for a country bumpkin like me ;)

Ok back to the topic... since it's just my 1st day (registration day) here, I still haven't learn a thing but really look forward to it since years ago. Working with OKU this past few year made me realize how important it is for everyone to learn and to be able to communicate with people with hearing/sight/speech problems. People with hearing/sight/speech disabilities have come so far as to learn signs to communicate with the community. I personally thing that if people everywhere learn signs just like they have it would lessen the communication barrier between normal and those with hearing/sight/speech disabilities. That's why I choose to come to KL all the way from KK (and erm erm little budget... belum gaji bah) to learn using sign.

So remember my last post about my period? Yay, finallly! 5 to 7 days after eating the last dose of Deviry 10mg, my period came out and last from 6 to 7 days. Now I hope, if I don't get preggy my second period this year comes out by the the same time last month or at least by the end of this month.

Happy New Year 2012 & A Visit to the Clinic

Happy New Year 2012! 


Hope everything went well for everyone last year and may god bestows all his blessings upon all of you in the coming new year 2012 and in many years ahead. 


So on new year I went to the clinic for a check-up since I haven't had my period for almost 5 - 6 months. I feel that I might be pregnant because I have several pregnancy symptoms such as strange cravings, mood swings, fatigue, stretch marks, stomach discomfort, enlarged abdomen, gaining lots of weight  and  to make it short ... I just 'feel' pregnant. In those  5- 6 months I took almost 15 home pregnancy tests but all shows negative/not pregnant.


I did went to the hospital last October but never had a clear result. I  had my first ultrasound scan. The doctor says that nothing is wrong with me or with my uterus. I ask the doctor to explain why I haven't had my period for months and got a simple answer... I'm over-weight. So I went to the gym and had a trainer's advice on how to exercise and some balance diet tips. After 2 months I still don't see any much different. One things for sure that I feel like there is something going on with my body and had those preg symptoms like I mention earlier but much worst than before especially the cramps around my abdomen.


Still not satisfied with my first check up (hoping that the second check-up will give me a positive result but still trying not to get my hopes up), I went to a clinic that I'm used to going every time when I need to get my immunization shots. I'm suppose to get my 3rd and last dose of HPV Vaccine but before I do so I just want to make sure that I'm not pregnant. (Note: It's not recommended for pregnant women to take this vaccine).


The doctor's first reaction shows that I might be pregnant. Then I had my abdomen check and an ultrasound (I even have a copy of the ultrasound photo) showing a negative result. My doctor explained that me being over-weight might have cause hormone imbalance that causes no period and fertility problem due to the ovary unable to release any egg. My doctor gave Deviry 10 mg for my period (for 5 days), Adipex retard capsule (for 30 days) to help me with my weight and finally advice me to continue exercise and control my diet.


I really hope that my period comes back again. My menstrual cycles usually changes since my teens. It's usually on time and sometimes comes only after 40-50 days since my last period. There are times that I could even have my period for 5 days start during the end till early of the month (for example: Jan, 29 - Feb, 2). Could that be counted as 2 months? Heheh.


To be honest after the second check up, I did feel a little sad that I'm not preggy yet but at the same time feeling relieved that I can finally do my normal routine without worrying about it. Just imagine not knowing that your actually baking something in your oven for months (thinking I'm just fat and not care less if it grows like a balloon) and only to found out all this time your 7-9 months preggy and about to go for labour during one of your gym sessions (lol). 


Anyway for now I'm going to take my doctor's advice (lose weight) and my husband and I will try to take this preggy issues one step at a time and just have fun for the time being. Never give up. Lastly I'm going to do some updates here if my period comes out after taking Deviry 10mg for 5 days (starting Jan 7).
